Homemade Pecan Sandies


Here's a recipe that I make regularly now. Someone I live with likes them very much and they're supposed to taste just like Pecan Sandies, maybe even better. Give it a try. My recipe is based on this one from All Recipes.

Homemade Pecan Sandies

1 cup butter
1 cup coconut oil (I use virgin coconut oil)
1 cup white sugar
1 cup confectioner's sugar
2 eggs
1 tsp vanilla
4 cups all-purpose sugar
1 tsp baking soda
1 tsp cream of tartar
1 tsp salt
2 cups chopped pecans

In a large bowl, cream together the butter, oil, and sugars. Beat in eggs, one at a time, then stir in vanilla. Combine the flour, baking soda, cream of tartar, and salt, and stir into the creamed mixture. Mix in pecans. Roll dough into 1 inch balls and place on ungreased cookie sheets. Bake for 10-12 minutes, or until the edges are just beginning to brown. Cool on wire racks.

Or, roll into balls and place on a wax paper covered cookie sheet. Place it in the freezer uncovered until frozen. Place frozen balls into a freezer bag until ready to cook. Pull out as many frozen cookie balls as you need for fresh cookies without the prep work.
